3 large zucchini, sliced lengthwise 1/8-inch thick strips
Salt
1 Tablespoon extra virgin olive oil
½ pound ground Italian sausage
1 cup BelGioioso Ricotta con Latte® cheese
1/3 cup BelGioioso Parmesan cheese, grated
1 egg
Fresh basil leaves, gently torn
2 garlic cloves, minced
Pepper
1 ½ cups marinara sauce, divided
16 oz. BelGioioso Baking Fresh Mozzarella cheese, cubed
Preheat oven to 400 degrees F.
Lay cut zucchini strips onto paper towels and sprinkle with salt. Let stand for 10 minutes, allowing the moisture to extract from the slices.
Over medium heat, add olive oil into a large saucepan, then sausage. Cook until brown, about 5 minutes. Drain excess fat.
Mix together the cooked sausage, ricotta, Parmesan, egg, basil and garlic. Season lightly with salt and pepper.
Spread 1 cup marinara sauce into bottom of oven-proof skillet. Add 1 tablespoon of sausage mixture evenly on top of each zucchini slice, add a few fresh mozzarella cubes. Roll up each slice and place into the sauced skillet, green side up.
Add remaining marinara sauce and sprinkle with more Baking Fresh Mozzarella.
Place skillet into oven and bake for 30 minutes, or until rolls are heated through and cheese begins to brown. Remove from oven and let rest for 5 minutes before serving. Garnish with extra grated Parmesan for added flavor.
