Toss shredded BelGioioso Fontina with 1/4 cup flour; set aside.
Melt butter over medium heat, add jalapeño pepper and sauté for a few minutes. Stir in 2 Tbsp. flour. Slowly add beer, whisking until smooth. Remove from heat and slowly whisk in Fontina cheese, stirring until melted. Season with salt and pepper to taste. Serve immediately.
