Fresh Mozzarella Egg Frittata Skillet

Ingredients

2 Tbsp. extra. virgin olive oil
1 small shallot, sliced
1 cup grape tomatoes, halved 
1 cup spinach, chopped
7 large eggs, beaten
1/4 cup heavy whipping cream
1/2 tsp. salt
1/4 tsp. pepper
6 oz BelGioioso Fresh Mozzarella for Baking, sliced
1 cup fresh arugula greens

Directions

Position rack in upper third of oven; preheat broiler.

Heat oil in large broiler-safe, nonstick or cast iron skillet over medium-high heat. Add shallot, grape tomatoes, spinach and cook, stirring frequently until soft. 

In a bowl, whisk together eggs, cream, salt and pepper. Pour into skillet and cook about 2 minutes, lifting edges to allow uncooked eggs to heat. Top with slices of Fresh Mozzarella and place under broiler until eggs are slightly browned, about 2 minutes. Remove from oven and let rest for 3 minutes and garnish with arugula greens. Slice and serve.
