Ingredients
- 1 lb. pasta
- 3 Tbsp. extra virgin olive oil
- 1 cup fresh asparagus
- 1 cup marinated artichoke hearts
- 1 cup grape tomatoes
- 1 cup green zucchini ribbons*
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 6 oz. BelGioioso Kasseri cheese, shredded
Directions
Prepare pasta and set aside to cool. Heat a medium-sized skillet and add 1 tablespoon of olive oil and asparagus. Sauté until almost heated through, then add artichoke hearts, tomatoes and zucchini ribbons, and heat for about 1 minute.
Toss vegetable mixture with pasta, parsley and remaining olive oil. Salt and pepper to taste. Top with BelGioioso Kasseri before serving.
