Ingredients
- 1 lb. pasta
- 3 Tbsp. extra virgin olive oil
- 1/2 lb. fresh tomatoes
- 2 chicken breasts, grilled and cut into strips
- 2 cups fresh arugula greens
- Salt & pepper to taste
- 6 oz. BelGioioso Parmesan cheese, shaved
Directions
Boil pasta in salted water until al dente or semi-hard, drain and place into a large serving bowl. Add the olive oil, tomatoes, chicken, arugula, salt and pepper to the pasta and toss together. Plate the pasta and top with shaved Parmesan before serving.
