Foodservice Quantity (Makes 4 Frittas)

On a lightly floured surface, lightly roll 1 ball into a 1/3 inch thick circle. Place 1/4 of the Stracciatella on one half of the circle. Top with 1/4 of the salami, 1/4 of the tomatoes and 1/4 of the mozzarella. Fold over to make a half-circle and gently push out any air bubbles before sealing tightly with a fork. Repeat with remaining dough.
Heat oil to 360 degrees. Fry frittas until golden brown on both sides. Serve immediately.
